Warm Peanut Butter Stuffed Peach Doughnuts

Peachy keen?


Warming, juicy, sweet,  gooey, nutty and crunchy - the only descriptive phrase I can't use for these is 'still existing' due to the fact that I ate them... All of them.

Now, I suppose this really can't be classed as a proper recipe as these 'doughnuts' are ridiculously quick and easy to make but I couldn't bring myself to not share them (It would be a crime to hoard them all for myself). These little golden rings can be eaten any time of day but are particularly good as a pre-workout snack due to: the peanut butter providing some protein which will keep you fueled and full up and the peach containing complex carbohydrates and natural sugars for energy, all whilst the cinnamon helps to keep your blood sugars stable to stop you from crashing. Gobble a few of these before a run and reap the benefits and even if you're not exercising, peaches are still a great source of vitamin A and can even help to regulate the immune system, helping you to stay feeling healthy and well.

Now here's a little bit of information about the star of this concoction - the Doughnut peach. This white fleshed fruit originated from China in the 19th century and despite looking like it may have been genetically engineered to fulfill our Krispy Kreme needs I assure you it's 100% natural. Doughnut peaches are perfect for this recipe due to the fact that they a) have a very similar shape to actual doughnuts and b) have a much sweeter taste than regular yellow flesh peaches. This sweetness is due to the presence of what is referred to as the 'honey gene' - a dominant gene that can be found in most Chinese peach varieties and when fully ripe the creamy and juicy flesh is said to have almond notes in the taste, making it sweeter still. A few other bonuses to doughnut peaches are that they are less fuzzy than other varieties, less acidic and the pit is non-clinging meaning it can be easily removed. These little beauties are in season from late spring throughout summer and if you're worried that they might be tricky to track down, I literally got mine from Lidl at an absolute steal of a price. This perfect little peach is the ideal hand-sized snack to satisfy your daily doughnut wishes. Enjoy!

Ingredients:
Doughnut or Saturn peaches (however many you want)
Peanut butter (I went for Whole earth's organic no sugar added crunchy variety)
Cinnamon to taste 

Instructions:
Turn on grill/broiler to a high heat - around 200 degrees Celsius.
Cut the peaches in half around the middle (and around the pit) and twist the two sides apart.
Cut/pop out the pit from whichever half of the peach its in.
Coat the inner sides of the peaches with 1-2 tsp of peanut butter. 
Sprinkle liberally with cinnamon before sandwiching the two halves back together.
Top with more cinnamon before placing under the grill for 6-8 minutes, turning over once halfway through.
Resist eating for a few minutes whilst they cool for a bit and then either add additional toppings or just gobble as is
